Roasted Vegetable Whole Wheat Pizza
Ingredients
- 16 oz. Mozzarella shredded
- 1/4 cup Parmesan Cheese grated
- 2 broccoli crowns chopped
- 1 small cauliflower chopped
- 1 large onion sliced
- 2 peppers sliced
- 8 oz. mushrooms sliced
- 4 Tbsp. olive oil
- 1/2 tsp. kosher salt
- 3 cloves garlic minced
- 2 whole wheat pizza crust
Instructions

Preheat over to 400F

Toss all vegetables together with oil and salt. Place on two metal sheet pans. Roast vegetables at 400F for 25 minutes. Allow to cool.

Add garlic oil* to 2 baking sheets, one for each crust. Mix the oil again and rub onto the two pizzas.

Divide the vegetables between the two pans and sprinkle with mozzarella cheese.

Bake pizzas at 500F for 12 minutes.

Remove from oven and sprinkle with parmesan cheese.
Apple Spice Baked Oatmeal
Ingredients
- 1 egg, beaten
- 1/2 cup applesauce
- 1 1/2 cups nonfat or 1% milk
- 1 tsp vanilla
- 2 tbsp oil
- 1 apple, chopped about 1 1/2 cups
- 2 cups old fashioned rolled oats
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
Topping
- 2 tbsp brown sugar
- 2 tbsp chopped nuts
Instructions

Preheat oven to 375 degrees. Lightly oil or spray an 8" x 8" baking pan.

Combine the egg, applesauce, milk, vanilla and oil in a bowl. Add the apple.

In a separate bowl, mix the rolled oats, baking powder, salt and cinnamon. Add to the liquid ingredients and mix well.

Pour mixture into baking dish, and bake for 25 minutes.

Remove from oven and sprinkle with brown sugar and nuts.

Return to oven and broil for 3 to 4 minutes until top is browned and the sugar bubbles.

Serve warm. Refrigerate leftovers within 2 hours.
Notes
- Substitute other fruit for the apple. Try bananas, pears, blueberries or a mixture
Fantastic French Toast
Ingredients:
2 eggs
½ cup fat-free or low fat (1%) milk
½ teaspoon vanilla extract
6 slices whole grain bread
Directions:
- Preheat the griddle over medium heat or set an electric frying pan at 375 degrees
- Put eggs, milk, and vanilla in a pie pan or shallow bowl and beat with a fork until well mixed
- Grease the griddle or pan with a thin layer of oil
- Dip both sides of the bread, one slice at a time, in the egg mixture and cook on the hot griddle or frying pan
- Cook on one side until golden brown. Turn the bread over to cook the other side. It will take about 4 minutes on each side
- Serve with syrup, applesauce, fruit slices, or jam
